Yummy & Healthy Sunday Recipe: Vegetarian Pan Pizza

METHOD

Step 1
Place flour and a pinch of salt in a large bowl. Stir to combine. Make a well in centre. Using a fork, whisk water, yeast and sugar together in a small bowl until yeast dissolves. Add to well. Using a wooden spoon, mix until dough just comes together. Turn out onto a lightly floured surface. Knead for 5 minutes or until smooth. Spray a large bowl lightly with oil to grease. Place dough in bowl. Cover with lightly oiled plastic wrap. Stand in a warm place for 1 hour or until doubled in size.
Step 2
Preheat oven to 220C/200C fan-forced. Spray a 30cm (base) pizza tray (see note) with oil to lightly grease. Punch down centre of dough with your fist. Press dough out over prepared pan.
Step 3
Spread dough evenly with pizza sauce. Sprinkle with half the cheese. Top with capsicum, mushroom, pineapple and remaining cheese. Arrange tomatoes on top. Bake for 25 minutes or until crust is golden and tomatoes have softened. Serve.

NOTES

A metal pizza tray is ideal for cooking thick pizza bases as it has a perforated base to allow heat to penetrate and crisp the base of the pizza. Turn this into a supreme pizza by adding ham, reduced-fat salami and black olives.
