Recipe of the Week: Low-Fat Buttermilk Panna Cotta with Peaches

Indulge yourself with a lusciously healthy, low-fat panna cotta dessert.

INGREDIENTS

2 cups buttermilk
2 tablespoons caster sugar
1 vanilla bean, split
2 teaspoons powdered gelatine
400g can Weight Watchers sliced peaches

 


 

METHOD

Step 1
Lightly grease four 1/2 cup-capacity panna cotta moulds. Place buttermilk, sugar and vanilla bean in a medium saucepan over medium-low heat. Heat, stirring occasionally, for 6 to 8 minutes or until just heated through but not simmering (don’t boil). Remove from heat. Strain mixture into a heatproof bowl. Sprinkle over gelatine. Whisk until gelatine dissolves. Set aside for 10 minutes to cool.
Step 2
Pour mixture between prepared moulds. Cover with plastic wrap. Refrigerate for 4 hours or until set.
Step 3
Carefully run a round-bladed knife around the edge of each panna cotta. Turn out onto plates. Spoon over peaches and syrup. Serve.

 


 

NOTES

Allow standing and 4 hours refrigeration time.
